Chemistry in the kitchen: tradition vs. the food industry
Chemical processes are an indispensable part of many types of preparation in the kitchen. Binding, cooking and preserving are just three examples. The Freiburg & Region Food Council invites you to immerse yourself in the world of these processes together with chef Michael Schwörer from Freiburg's Adelhaus restaurant. You will learn and experience how artisan cooking makes use of this. We will also explain how the food industry has "optimized" these processes and what effects this has on food and therefore on health. Personal details: Michael Schwörer is head chef at the Adelhaus in Freiburg. He is a trained chef, qualified master chef and restaurateur. He is passionate about cooking with regional organic produce and healthy eating. He is passionate about passing on his philosophy and specialist knowledge and explaining the resulting working methods.
