brotbruder is a modern bakery in the Wiehre district of Freiburg, which was founded in 2022 by master baker Michael Schulze. After an inspiring trip to the west coast of the USA, where he visited baker friends, he decided to rethink the bakery trade. His bakery bakes during the day, no one starts before 6 am. The range is deliberately kept small to ensure the highest quality. All products are made with Bioland flour and without additives. The team attaches great importance to sustainability: leftover bread is recycled, coffee is offered in the Recup reusable system and unsold goods are donated to the Freiburg food bank
